A Fresh, Colourful, Seasonal Salad for the Dead of Winter

This tasty winter salad is easy to make, and all the ingredients are available now at the Food Co-op Shop.
Roasted Beetroot, Spiced Pecan,
& Kale Salad with Citrus Vinaigrette

Serves 4-6 people
Beetroot                                  4-6 each
Kale (or Silverbeet)                 1 bunch
Pecan, shelled (or Walnuts)   1 cup
Rapadura Sugar                     1 Tbsp
Cayenne Chilli, ground           1/8 tsp
Smoked Paprika                     1/4 tsp
Fresh Goat Cheese                100 grams

Orange                                   1 each
Balsamic Vinegar                   2 Tbsp
Extra Virgin Olive Oil             100 ml
Salt                                        to taste
Black Pepper                         to taste1) Roast, cool, and peel the beetroot. Cut the beetroot into bite sized wedges.
2) Wash the kale, strip the leaves from the stems, and slice thinly (crosswise).
3) Heat a pan over low to medium heat. Add 1-2 tablespoons of olive oil to the pan. Then add the pecans. Heat gently, stirring often, until the pecans are aromatic. Remove the pecans from the pan and place them in a bowl. Toss the pecans with the rapadura sugar, smoked paprika, chilli powder and salt to taste.
4) Zest and juice the orange.
5) In a small bowl, mix together the balsamic vinegar, 2 tablespoons of the orange juice, and salt & pepper to taste. Drizzle the olive oil slowly in while whisking. Set the vinaigrette aside.
6) Crumble the goat cheese.
7) Toss all the ingredients together in a large bowl and serve.
8) Enjoy!!!

Acoustic Soup…

Acoustic Soup is live in your eardrums and in your belly at the Food Co-op Shop tomorrow night, Wednesday, 10 July from 7:00pm. Admission is $10 (includes a meal) or $8 for students and Co-op members.

Find out more at their website. In addition to helping the environment, having a BYO “Keep Cup” has other advantages. When you buy a BYO “Keep Cup”, receive your first coffee on us, and there are new coffee prices for those of you who have a “Keep Cup” or elect to stay in the Food Co-op Cafe and have your coffee in ceramic. The new prices are:

Also, our takeaway cups are now fully compostable. If you don’t have a way to compost them at home, bring them back to us, and we will compost them for you. This makes us the only completely organic, fair-trade, and compostable cafe in Canberra. For anyone buying a takeaway coffee in one of our new, fully compostable takeaway cups, the prices remain:

…But, don’t despair. If you remember to compost your cups, you are helping the environment.
Get Involved…
There are always heaps of projects around the Food Co-op Shop for which you can volunteer. The Acoustic Soup team is looking for volunteers for tomorrow, Wednesday, 10 July from 11am to help with food prep, set up, service, and clean up. We are also looking for someone to help with our weekly veggie boxes. For this position, we are specifically looking for someone who could help in a ongoing weekly capacity. For those of you with small children who are looking to work from home, we are currently looking to build a fundraising team. Email us to find out more.
Lost Lunch…
Our weekday lunches are on hiatus for a few more weeks. They will resume on Tuesday, 23 July with a new surprise… we will be adding lunches to Friday, which means we will serve lunches at the Food Co-op Cafe four days a week, Tuesdays through Fridays.
